Grilled Burgers with Pineapple Salsa and Chipotle Mayo

Ingredients

Pineapple Salsa:
1 cup (250 mL) diced pineapple
2 tbsp (30 mL) diced red pepper
2 tbsp (30 mL) diced red onion
2 tbsp (30 mL) finely chopped fresh cilantro
2 tbsp (30 mL) olive oil
2 tbsp (30 mL) lime juice
1/4 tsp (1 mL) chili powder
1/4 tsp (1 mL) salt 

Chipotle Mayo:
1/3 cup (75 mL) vegan mayonnaise
1 tsp (5 mL) minced canned chipotle in adobo sauce 

Burgers:
1 pkg (300 g) Yves Veggie Cuisine® The Good Veggie Burger (4 burgers)
4 burger buns, toasted
4 leaves leaf lettuce

Directions

  1. Pineapple Salsa: Stir together pineapple, red pepper, red onion, cilantro, olive oil, lime juice, chili powder and salt; let stand for about 10 minutes to allow flavours to blend.
  2. Chipotle Mayo: Stir together mayonnaise and chipotle.
  3. Burgers: Grill burgers according to package directions. Spread Chipotle Mayo over buns. Assemble burgers in buns with lettuce and Pineapple Salsa.

Tips

For a spicy addition, add one minced jalapeño or finger chili pepper.
